FILET MIGNON RED WINE REDUCTION SAUCE
Preparation Time: 10 MINS.
Cooking Time: 25-30 MINS.
- 1 cup Onion
- ½ cup Carrots
- ½ cup Celery
- 1 tsp Tomato paste
- 1 Tbsp Flour
- 1 cup Red wine
- 1 cup Beef stock
- 2 Tbsp Olive oil
- Saute the mirepoix: onions, carrots and celery in olive oil.
- Add tomato paste and cook for 3-5 minutes under low fire.
- Incorporate flour and cook again for 3-5 minutes.
- Add red wine and reduce until almost dry.
- Add beef stock and simmer until reduced.
