FILET MIGNON RED WINE REDUCTION SAUCE

Serves: 1

Preparation Time: 10 MINS.

Cooking Time: 25-30 MINS.

 INGREDIENTS

MIREPOIX:

  • 1 cup Onion
  • ½ cup Carrots
  • ½ cup Celery
  • 1 tsp Tomato paste
  • 1 Tbsp Flour
  • 1 cup Red wine
  • 1 cup Beef stock
  • 2 Tbsp Olive oil

PROCEDURE

  1. Saute the mirepoix: onions, carrots and celery in olive oil.
  2. Add tomato paste and cook for 3-5 minutes under low fire.
  3. Incorporate flour and cook again for 3-5 minutes.
  4. Add red wine and reduce until almost dry.
  5. Add beef stock and simmer until reduced.

Serve as a sauce for Filet Mignon Steak
