EASY ENSALADANG LECHON KAWALI RECIPE

Serves: 3-4

Preparation Time: 15-20 MINS.

Cooking Time:       15 MINS.

 INGREDIENTS

 

  • 5-6 slices of lechon kawali (cut into bite sizes)

ENSALADA SAUCE:

  • 4 tbsp Anchovy sauce (bagoong isda)
  • 5-6 Calamansi (juiced)
  • pinch of gound black pepper
  • 3 wild chilies (minced)

ENSALADA:

  • 1 Large white onion (cut into cubes)
  • Cilantro or celery leaves
  • 1 cucumber (cut into cubes)
  • 3 Tomatoes (cut into cubes)

PROCEDURE

  1. Prepare ensalada while waiting for the lechon kawali.
  2. Mix the chopped cucumber, tomatoes, cilantro or celery leaves in a bowl. Set aside.
  3. In a separate bowl, prepare the ensalada sauce. Mix anchovy sauce (bagoong isda), ground black pepper and calamansi juice. Taste for adjustment. Set aside.
  4. Let the cooked lechon kawali rest for few minutes and be ready for chopping.
  5. Chop the lechon kawali into chunky bite size.
  6. In a large bowl, mix the chopped lechon kawali and the ensalada. Toss lightly.
  7. Using a spoon, pour the sauce on your ensaladang lechon kawali
